Ingredients

- Juice and zest of 1 lemon

- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- Salt and pepper to taste
Instructions
- Prepare the Vegetables: Wash and chop the vegetables into generous pieces.
- Make the Marinade: In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, salt, and pepper.
- Marinate: Toss the veggies in the marinade until well coated. Allow them to marinate for at least 20 minutes.
- Preheat the Grill: Preheat your grill to medium-high heat, ensuring it’s oiled to prevent sticking.
- Grill the Vegetables: Place marinated vegetables on the grill grates and grill each side for about 5-7 minutes.
- Serve: Remove vegetables from the grill, drizzle with extra lemon juice, and sprinkle with fresh herbs before serving.
Notes
Use a grill basket for smaller vegetables to prevent them from falling through the grates. Avoid overcrowding the grill for even cooking.
